This Vintage Casserole Recipe Was Recommended for Busy Homemakers Years Ago. Still a Good Idea!
This is a recipe from my young days in Southern Indiana. We didn't have Chinese restaurants in our little town but I still came to love "Chinese food". We were always putting things together to make our version. This casserole was one of the results. It was recommended for busy homemakers in the late 50s, early 60s. Today's cooks are often busy and this casserole is still a good idea. Back then "homemakers" were busy doing the "wash" in a wringer washer and hanging the clothes on outside clotheslines to dry. They stood for hours, ironing the wrinkles out of said "wash". They planted, harvested, and preserved the fruits and vegetables from their gardens. They often mowed large lawns with old-fashion push mowers. Often they sewed and made the family's clothes. Yes, their days were busy and they often needed something for an easy meal. Today's cooks are just as busy but in different ways. However, there is still a need for quick and easy recipes. This Chicken Chow Mein Casserole goes together quickly and only bakes for half an hour, making it as relevant to today"s cooks as to yesterday's homemaker! And the good thing about today is the cook doesn't have to go out back, catch a chicken, pluck the feathers, then cook it!
CHICKEN CHOW MEIN CASSEROLE
This recipe is a great way to use left-over chicken (or turkey). Don't have any leftovers? No problem. Purchase a deli roasted chicken and pull the meat off the bones or buy thick sliced chicken at the deli and dice. This dish may be prepared ahead of time, covered and refrigerated. When ready, remove from fridge and bake for an extra 5 minutes or so, if necessary to heat through.
2 tbsp butter
1 cup celery
1 small onion, chopped
1 small green bell pepper, diced or thinly sliced
1 small can mushroom stems and pieces, drained
3 tbsp cornstarch
1/4 tsp black pepper
1/2 tsp salt
1/2 cup chicken broth
1 1/2 cups low-fat milk
2 cups diced or shredded cooked chicken
1 can bean sprouts, drained
2 tbsp low-sodium soy sauce
1/2 cup chow mein noodles
In a medium skillet, melt butter and saute the celery, onion, and bell pepper for 5 minutes. Add the drained mushrooms a couple of minutes before done. Add the cornstarch while stirring. Gradually stir in the chicken broth and the milk. Add the soy sauce, salt, and pepper; continue to cook until slightly thickened.
In a buttered 1 1/2-quart casserole dish, alternate layers of chicken, bean sprouts, and the sauce, using half of each per layer. Sprinkle the chow mein noodles over the top.
Bake casserole at 350 degrees for 30 minutes.
Serves 4 to 6.

Why aren't people stopping at my lawn sale?
Yesterday was our town's community-wide garage sale. My next-door neighbor and neighbors in the two houses across the street were also having sales. I can tell you it wasn't worth the effort to set it up. People walked right past my sale to get to the others. Now I have nice antiques, vintage glassware and other collectibles. The other people had handmade items and crafts or new looking merchandise, kid's toys and clothes. Why would people want to buy modern things when there are fine antiques to be had?
I'm having the same problem. I think nowadays most people want new and practical merchandise. My aunt makes around $150 on weekends she has sales and she sells toiletries, home care products and office supplies. Antiques aren't popular now. People are having trouble paying household expenses, whey would they but antiques to put in a house they may have to sell soon? But everyone needs toothpaste and deodorant. Also money isn't as "loose" as it was even several years ago. If you know you have valuable items and price them so, people ARE going to walk by and head for possibly better bargains. Also if you have continuous sales, the "locals" will figure "Been there - done that." The few you implied did stop to look were probably from out of town and had not seen your sale before.
