Low Fat Meal Recipes
If you're like me, you're always looking for recipes. There doesn't seem to be enough of them. Cooking everyday can be such a chore. On top of that, you're on a diet. In some cases, you have to cook 2 different meals - one for you and one for your family. This gets old very fast. But I have some low fat meal recipes that your family might like as well. Hey, anything could happen. Try them out and see what you think.
Breakfast Wrap
In sprouted grain tortilla (eggs and any unprocessed meat, any veggies, any cheese)
Mix of Dried Apricots, Mangoes, Figs
Swiss Chard with Garlic and Lemon
Wash and Cut Swiss Chard. On medium heat place minced garlic and olive oil in a skillet, let cook for 2 to 3 minutes, then add Swiss chard. Cover with lid and let cook for 4 to 6 minutes or until chard is wilted. Season with pepper and lemon juice, then serve.
Garlic Edamame
Cook 1/2 cup of edamame according to package directions. Sprinkle garlic powder and serve.
Chicken Souvlaki
In bowl, mix together lemon juice, oregano, olive oil, and garlic. Put chicken, peppers and onions onto skewers and lightly oil the skewers. Cook until done.
Egg Salad Lettuce Wrap
Hard boil eggs, let cool, then peel and cut. Add pepper, onion, dill, mustard and low fat plain yogurt. Stir, then wrap in piece of Romaine lettuce and serve.
Protein Shake w/ Fruit
With natural sweeteners (with any of the following: any fruit, flax oil, avocado, plain yogurt, ground flax seeds, psyllium husk [powder or husk], hulled hemp seeds).
Fish & Sweet Potatoes
Fish and Mashed Sweet potatoes.
Spinach Salad w/ Nuts
Can add olive oil. Make sure the nuts are unsalted.
Asparagus & Edamame Salad With Mint
Boil asparagus for 2 to 3 minutes, then drain and rinse. Place with 1 cup of shelled edamame (buy frozen and cook according to directions) and add a handful of chopped mint, then poor with 3 cups of olive oil and season with pepper, then serve
Spinach Salad w/ Shrimp
Spinach salad with shrimp (Or fish). Add any vegetables you like.
Breakfast Smoothie
Blend half banana, 50g of crushed pineapple, 50g of mango, 1 diced peach and a cup of skim milk. Ready to serve.
Popcorn with Cinnamon Or Cayenne Pepper
Air-Popped Corn with Cinnamon/Nutmeg/Cayenne pepper
Greek Quinoa Salad
Cook quinoa, slice cucumbers and low fat feta, then mix and top with a drizzle of extra virgin olive oil, season with pepper, then serve

Swiss Chard - any yummy ideas for marinade? Thanks!!?
We grow it at home, and its got a cool, but slightly odd taste-I thought somesort of lemony flavour?
Anyone know anyother way to make it taste groovy?
Here is an easy recipe I had:
1 1/2 lbs. fresh Swiss chard (ruby or green)
1 tbs. olive oil
6 medium garlic cloves, minced
salt and pepper, as desired
2 Tbs. vinegar (balsamic or red wine)
Cut the leaves off the chard and discard the stems. Coarsely chop the leaves. Heat a large skillet until it is hot. Add the olive oil and the chard. Stir and cook for about 2 minutes over high heat. Add the garlic, and stir-fry several minutes more until the chard is limp. Sprinkle lightly with salt and pepper, as desired. Toss with vinegar, and serve.

Where To Eat in Manhattan - Kafana
Spinach Pie 1
Ingredients:
500g feta cheese, 200g sour cream, 400-500g spinach or chard, salt, phyllo pastry, 3 eggs
Preparation:
1. Boil spinach (chard) in lightly salted water.
2. Grease a baking tray with oil.
3. In a bowl, combine feta, sour cream, eggs, cooked and drained spinach (chard). Salt to taste.
4. Spread some filling on phyllo pastry and roll. Then wrap in a spiral. Repeat the process until you spend all phyllo and filling.
5. Bake in preheated oven at 200 C, 30 to 45 minutes or until baked.
6. Remove from oven, cover with a cloth.
Spinach Pie 2
Ingredients:
500-600 g flour, 1 teaspoon salt 1 teaspoon baking powder, 2-3 tablespoons oil
For the filling: 500 g feta cheese, 3-4 eggs, 500 g spinach (swiss chard), 2 tablespoons oil
Preparation:
1. In a bowl mix flour, salt and baking powder, add 2-3 tablespoons of oil and knead the dough adding the warm water as needed to get dough medium softness that isn't sticking to your fingers - to be flexible.
2. Divide the 8 equal balls.
3. Each ball develop with rolling pin into the size of the middle plate.
4. Every dough grease with oil (3 out of 4) and put one onto other - last piece of dough don't grease with oil.
5. Repeat this step one more time.
6. Now from this dough that we have and develop into 2 crust pie - size of the pan.
7. Greased baking tray and place the bottom crust.
Filling:
8. Spinach (swiss chard) boil in lightly salted water. Drain, chop finely, add 3-4 eggs, crumbled feta cheese, salt and 2 tablespoons of oil. Stir well.
9. Put the filling over bottom crust in pan, then carefully put over another pie crust (if desired, form edge of pie crust the way you want), and sprinkle with little oil.
10. Bake at 220 C degrees until nicely browned.
Sopska - tomato, cucumber & onion with cow feta cheese
Ingredients:
300g cucumber, 6-7 tomatoes, 1 onion, 200g feta cheese, parsley, oil, salt
Preparation:
1. Peel onions. Finely chop onion and parsley and season with salt.
2. Cut tomato and cucumber in slices and mix with onions, parsley and oil.
3. Let it stand for 2 hours in refrigerator.
4. Before serving add crumbled feta cheese.
Stuffed Roasted Red Peppers
Ingredients: 10 roasted red peppers, 10 slices of Gouda or Trappist cheese or feta cheese, 10 slices of ham, salt, flour, a little oil, 2-3 eggs
Preparation:
1. Filling 1: in each roasted pepper put slices of Gouda or Trappist cheese and a slice of ham.
2. Roll in flour, then in well beaten eggs and bake in a little deeper oil until golden brown.
3. Fried peppers put on paper towel to drain.
4. Filling 2: in each roasted pepper put feta cheese.
5. Repeat steps 2 and 3.
